Why Output Falls When the Heat Rises

A normal summer drop is one thing. A unit that’s lost half its production, freezing up, or short-cycling has something specific going on. The usual suspects:
- Dirty condenser coils. The single biggest cause of summer output loss. A coating of dust, grease, or pollen on the coil acts as insulation and crushes heat rejection.
- Ambient temperature at the unit. Machines tucked into back-of-house alcoves, near fryers, or against hot walls can sit in 110°F microclimates even when the dining room is comfortable.
- Inlet water temperature. Summer tap water in Central Texas often runs 80°F or warmer. Every degree above spec adds production time.
- Scale buildup on evaporator plates. Hard water leaves mineral deposits that insulate the refrigerant from the water being frozen.
- Refrigerant charge or restriction issues. A unit that’s slightly low or has a partially clogged metering device will limp through cool months and fail loudly when load increases.
- Failing fan motors or contactors. Components that test fine on a mild day can drop out under sustained summer run times.
- Restrictive water filters. Most commercial filters should be changed every six months. Many haven’t been touched in over a year.

What Operators Can Do Before Calling for Service
A few things are worth checking before the phone call:
- Confirm 6–12 inches of clearance on all sides of the condenser. Move boxes, mop buckets, and rolling racks away from the back and top of the unit.
- Pull the front panel and look at the condenser coil. If it’s gray, fuzzy, or matted, it needs cleaning — ideally with proper coil cleaner, not just a brush.
- Check the water filter cartridge if the unit has one, and note how long it’s been in service.
- Note whether the unit is running constantly without making ice, short-cycling, or producing partial or soft cubes — this helps a technician diagnose remotely.
- Log production over a 24-hour period. A unit rated for 500 lbs/day that’s actually making 320 has a real problem, not just a hot day.
Routine condenser cleaning, water filter changes, and scale management are the difference between a unit that gets through summer and one that fails on a Friday night.
